Hello friends,
in light of the most recent information from the Maine CDC, we have made what we feel is the responsible decision to postpone opening this weekend to be proactive in keeping our team, guests, and friends healthy. We are especially grateful for the dedication of our first responders and those providing rational, well-intended, and well-studied recommendations to slow the spread of infection in our communities. We look forward to gathering with you when the time permits.
Cellardoor and Cafe Miranda strive to inspire fun no matter what, so with that in mind, we’re sharing a sweet and spicy mouthwatering recipe for Panko Breaded Fried Chicken and Waffle Skewers with Chipotle Maple Syrup and Apple Slaw that you can enjoy at home.

Panko Breaded Fried Chicken and Waffle Skewers with Chipotle Maple Syrup and Apple Slaw
Chicken:
3 chicken tenderloins-skewered
1 egg scrambled
1⁄4 cup flour
3⁄4 cup panko
1/2 cup oil for frying
Salt and pepper
3 skewers soaked in water 20 minutes
Harpoon Chicken Tenders onto Soaked Skewers
Dredge in seasoned flour then egg then panko – pan fry till cooked through
Waffle:
2 cups flour
2 eggs
1 3⁄4 c milk
1⁄2 cup vegetable oil
1 tsp sugar
4 tsp baking powder
1⁄4 tsp salt
Beat eggs until fluffy then add remaining ingredients and mix until smooth. Pour into preheated waffle iron and cook until golden.
Syrup
Whisk together:
1⁄2 cup real maple syrup
1 tbsp lemon juice
Dash toasted chipotle powder
Dash toasted paprika
Apple slaw
1 gala apple
1⁄4 cup shredded carrot
1⁄2 cup cabbage shredded
1⁄8 cup raisins
Chopped Parsley
A squeeze of lemon juice
3 Tbsp Extra Virgin Olive Oil
Salt and pepper
Combine all ingredients and toss well.
To assemble: Place Waffle on a plate. Top with Chicken Skewer followed by the Apple Slaw then Drizzle with the Syrup and Enjoy!
